Dried pasta is good. Fresh pasta is extraordinary. The techniques are not difficult and the result is well worth it. Press aball of dough through two rollers to form a uniformly thin sheet for slicing into fettuccine or noodles. If you don't want to crank by hand there is an electric motor attachment available.
So easy and so much fun! I've read some horror stories about making pasta with a machine, so I was prepared for it to be a challenge. It couldn't have been easier! It rolled and cut effortlessly. The key must be the dough ... which can't be sticky or overly dry. I made mine with 3 eggs and 300 grams of bread flour in a Kitchenaid mixer with a dough hook. The dough was a little on the dry side so I added a few drops of water. Then I wrapped the dough in plastic wrap for 30 minutes and let it rest before rolling. There was absolutely NO clean-up needed for the machine when I was finished. Great fun!

Love it I love gnocchi and with this machine it is a snap.My aunt has one she bought 20 years ago and it still works great. Just make sure you follow the recipe included with the machine. Make sure you don't have sticky dough or I promise you will never want to try it again. I will be buying more of these to give to our daughters.

Kind of bulky, but strong and reliable. I would just add one or two speeds... a slower one at least would useful, and a way to change thickness of the pasta without the need to get the motor out everytime.
